"The Revolutionary Veggieese" are designed for those who do not want to give up a cheesy experience but pay attention to health, sustainability, ethics. They are a new way to consume locally produced, naturally fermented vegetables, rich in probiotics and low in saturated fat. They contain between 50% and 75% vegetables, a small amount of fermented organic soy, and are free of lactose, gluten, nuts, GMO ingredients, and coconut oil. They are produced using the salting and maturing techniques taught to me by my grandmother for the production of milk-based cheeses! Tradition and innovation come together to give life to: "Patatino", a hard cheese excellent to be grated on pasta made from potatoes "Caciolfiore", young and creamy suitable for sandwiches and toasts, made from cauliflowers "Carotella" with a smoky flavor, perfect for giving an extra touch to dishes, made from sweet potatoes and carrots.
