This is not your average cookbook. No sterile lists of ingredients, no obsessively plated dishes for a jury that never smiles. Trust me—I’ve competed in those cooking contests. I’ve gained national awards, stood on culinary podiums, and cooked under the pressure of bright lights and ticking clocks. It was thrilling. But also? A little too serious, sometimes.

This book is different. It’s a journey through the kitchens that shaped me—from Michelin-starred restaurants in France, the Netherlands, and Catalonia to smoky street stalls in Thailand. Yes, I’ve spent years refining technique and chasing perfection. But the dishes closest to my heart are not always the most polished—they’re the most personal.

I’m Marc Rewinkel. Dutch by birth, shaped by kitchens around the world. I’ve cooked in some of Europe’s top fine-dining restaurants and served as sommelier aboard the Queen Mary 2, where I paired wines for royalty and raconteurs alike. But I’ve learned just as much from a Thai chef with a wok and a grin, or a Catalan grandmother who cooked with fire and soul.

The recipes in this book are personal favourites. They tell stories of friendship, love, and discovery. They’re not overly complicated—they’re meant to be cooked, shared, and savoured. And of course, each comes with a thoughtful wine pairing. Because food without wine is like a story without an ending.
