Our story began more than 80 years ago with Dylan’s grandfather, who grew up as the son of a renowned butcher in the Bollenstreek. What started there was more than craftsmanship: it became a family legacy rooted in a love for the product, respect for the trade, and an obsession with flavor.

That passion lives on in our kitchen, where chef Nils van Werkhoven and his brigade bring the same dedication to life every single day. One of our greatest assets is the Josper Grill, fired with 100% charcoal. It gives our meat dishes their distinctive deep and full flavor and forms an essential part of the culinary signature of DYLANS.

It is no coincidence that DYLANS has been featured in the Michelin Guide for eight consecutive years, a recognition we carry with pride and gratitude.
